Introduction to BRIOGEL® gelling starches

BRIOGEL® is a line of starches that deliver gel-like texture that helps with shape retention in baked goods and gel quickly to prevent bake-out in pastry fillings. BRIOGEL® starches also come in BRIOGEL® Instant varieties that are suitable for hot and cold applications and enable the firm texture desirable in confections, spreads, and pastry fillings that allow the product to hold the desired shape.

BRIOGEL® 5093 gelling starch is a tapioca-based starch that creates a soft gel texture, and rapid gelling rate, making it suitable for applications such as processed cheese.

BRIOGEL® 5204 gelling starch is a tapioca-based starch that creates a soft gel texture, and rapid gelling rate, making it suitable for applications such as processed cheese.

BRIOGEL® 5305 gelling starch is a tapioca-based starch that creates a slightly firmer gel texture. The fluidity of BRIOGEL® 5305 starch triggers gelling after cooling which makes it optimal for use in confections such as gummy candies, jams, and jellies.
