How we created indulgent clean-label yoghurts

One of our global customers wanted to create a new win within the dairy space with the launch of an indulgent, clean-label yoghurt line. They knew that to target their product to a wider customer audience, they would need to create a yoghurt that not only offered a creamy mouthfeel, but also was in line with increased consumer demand for cleaner labelling.

The solution was a great success, helping our customer bring the added benefits simple labelling and overall clean flavour to their yoghurt line. The brand continues to grow with its smooth and decadent texture, a winner with consumer tastes.

The customer turned to Tate & Lyle for advice on how to improve their product line, creating a luxurious yoghurt while also meeting with consumer demand for simplified labelling in the dairy industry. Our R&D teams worked closely with the consumer to develop a clean-label stabiliser system in response to the simple label trend in the yoghurt category.

Having worked closely with this particular customer for many years in their culture plants, we were confident in our ability to sufficiently scale-up our clean-label solution, by modifying our dairy pilot plant to a similar processing setup and mimicking the sheer in their facilities.
